Jamaican Brown Stew Chicken

Ingredients:

2 1/2 - 3 lb. chicken 0r (chicken parts)
1 large onion
3 stalks scallion (green onion)
3-4 cloves garlic (optional)
2 tsp. black pepper
3 tblspn. soy sauce
4 tblspn. ketchup
2 tblspn. vegetable oil
dash of msg. (optional)
3 small carrots
2 small potatoes
1 can whole tomatoes
1 green bell pepper
salt to taste
1 1/2 cup chicken broth or water

Directions:

Clean & cut chicken into pieces.
Finely dice onions, green pepper, garlic, and scallions.
Add soy sauce, ketchup, salt, pepper + msg (if desired).
Marinate in bowl for several hours, or covered overnight in refrigerator.
Heat oil in pan.
Add chicken pieces & stir until lightly browned.
Add marinade mixture & broth, potatoes, carrots, & tomatoes.
Cover and cook over medium heat until tender to fork.
